Southern Recipes
I was most fortunate in that there were
world-class cooks on both my side of the family and on my bride's side of the
family. When our parents' passed away my bride and I were the recipients of
their recipes. My bride's family specialized in Cajun foods primarily while my
mother and aunt specialized in coming up with their own Southern style recipes.
In the 1940's, my Aunt was "Mrs. Georgia" in the "Mrs. America Pageant," and the
recipe she selected was unanimously selected at the best recipe of the pageant.
My mother loved to cook and experiment. She was in the kitchen almost from the time she
awakened until bed time. Each meal was a surprise. Breakfast and Lunch were
informal and Dinner was always formal. While she had a few commercial cookbooks that she
occasionally used, most of her recipes were either ones she created, ones others
shared with her, or ones she modified. She had dozens of handwritten cookbooks
in spiral binding. It was interesting to see how over time she modified recipes
and made comments. My bride's sister is also a world-class cook.
It amazing that Mom was such an outstanding
cook. She was a strict vegetarian and not only had never eaten a bite of meat
since she was about 6 years old, she would not eat anything that had been cooked
in a pan that meat might have been cooked it. When we went out to eat, she would
come along, but she would always bring her own little "lunchbox" that she had
prepared for the outing. In her kitchen she had separate cabinets for her
cookware, plates and utensils and other cabinets for anything that touched meat.
When she was a child she saw the father of one of her playmates fell into a huge
sawmill saw blade and get cut into several pieces. Someone there mentioned that
he looked like a raw steak and that stuck with her until she passed away at age
90,
Since we enjoy cooking, it is only natural
that many of our friends are also excellent cooks. Some of those have given me
permission to include their favorites in this collection of recipes.
To the best of my knowledge, none of these
recipes have ever been published with a couple of exceptions. Several years ago
I printed a small recipe book that I gave to family and friends for Christmas
and some of the Renaissance Festival recipes were included in a cookbook I
published and sold at the two renaissance festivals we participated in.
I am going to start printing these recipes
non 3.5" x 5.5" cards and offer them in sets of 5 recipes at $5 per set,
postpaid. All are relatively easy to make, but some take quite a while. Detailed
instructions are included. You can make your own sets of 5 by selecting the
recipes you prefer. The cards are designed to fit any standard 4" x 6" recipe
box.
I have intentionally not included
illustrations on the cards because they serve no purpose and consume space that
is needed on some of the more lengthy recipes.

but only about a half hour of your actual time.

easy to make and is absolutely delicious

favorites, created by my youngest daughter
E10 - Eggs Benedict - Outstanding - my all-time
favorite breakfast
A11 - Escargot al la Rothenberg - If you like
escargot you will love this recipe
A12 - Marty's Baked Oysters - Very easy to make.
The problem is that by the time it is ready to serve, most of the oysters are
gone
E13 - Gutenberg's Red Beans and Rice - Over a
20-year period at the two renaissance festivals we participated in, this recipe
was tweaked to perfection
E14 - Jack's Beef Stroganoff - Fantastic
V15 - Esther's Potato Salad - A great recipe from
my German partners and dear friends, Bernd and Esther Poser
E16 - Clam Spaghetti - This is a wonderful and
unique recipe my German partner's came up with.
S17 - Quick and Easy Strawberry Pie - My middle
daughter came up with this great recipe you can make on the spur of the moment
E18 - Chicken Teriyaki - Delicious
E19 - Happy's English Pot Pie - An outstanding dish
that can be served fresh or freeze in single serving freezer bags and heat in
boiling water when ready
E20 - Chicken Breasts Margaret - Watch the
disappointment on your guests faces when you tell them there aren't any seconds
E21 - Penne with Smoked Salmon - I have not tried
this yet, but it is one of my sister-in-law's family's favorite dishes so it
must be great
E22 - Herbert's Fish - Next time you go fishing and
come home with an empty creel, stop by the fish market, pick up a couple of nice
trout to brag about and try this recipe
S23 - Dunleith Cake - To say this is good is a
gross understatement. It's the best cake I've ever eaten.
E24 - Crawfish Etouffee - Ralph and Cacos is good,
but this recipe is great.
S25 - Mississippi Mud Cake - A favorite of both
adults and the kids
M26 - Red Raspberry Dessert Sauce - Wonderful
served over pound cake, ice creamed, poached pears, etc.
V27 - Sweet Potato Souffle - A fantastic
Thanksgiving dish
M28 - Homemade Chicken Noodle Soup - Great on those
cold winter evenings or when your feel bad hurts
S29 - Chocolate Mousse - Adults and kids alike will
scarf this down
C30 - Broccoli & Cheese Casserole - A family
holiday favorite
L31 - Famous Davis Christmas Sangria - 40 years ago
some friends visited Spain and came back with this recipe. Jack has tweaked it
over the years to where now it is perfect
E32 - Gutenberg's Seafood Gumbo - Like Gutenberg's

S41 - Bananna Pudding - This is the best banana
pudding recipe I have found. It was in my mother's recipe book, but I don't
think she created it
